Blueberry Streusel Muffins


These are SO good! However not so fat-free. I do replace the oil in the recipe with applesauce. Tip: Anytime a recipe calls for veg. oil, use applesauce. The oil is simple to keep it moist. Why add all the extra fat and calories when applesauce does the same. Plus it doesn"t taste any different!

Ingredients:

Muffins
*3/4 c. milk
*1/4 c. applesauce (or oil if you want to go full fat..)
*1 large egg
*2 c. flour
*1/2 c. sugar (or feel free to use Splenda to cut even more fat and calories.)
*2 tsp. baking powder
*1/2 tsp. salt
*1 c. frozen or fresh blueberries

Streusel Topping (if you desire..it makes them BETTER!!)
*1/4 c all purpose flour
*1/4 c. sugar
*1/4 tsp. cinnamon
*2 tblsp. firm, cold butter

1. Heat oven to 400 degrees. Grease muffin pan (12 med. cups) with cooking spray or line with baking cups.

2. Make strusel topping and set aside

3. Beat milk, applesauce and egg in large bowl with fork or wire whisk. Stir in flour, sugar, baking powder and salt all at once just until flour is moistened (batter will be lumpy so don't over mix! muffins will be tough if over mixed.) Fold in blueberries. Divide batter evenly among muffin cups. Sprinkle each with about 1 tablespoon topping.

4. Bake 20-25 min or until golden brown. If baked in greased pans let stand about 5 min. then remove from pan then to a wire rack to let cool. If baked in paper cups remove immediately and place on a wire rack to cool.

Peaches and Cream Crisp


So easy. So GOOD! This is my Aunt Janet's recipe. I did add a couple things..*

1 29 oz. can peaches, drained (I used fresh. About 8.)3/4 c. quick-cooking oats1/2 c. flour
1/2 c. brown sugar
6 tbsp butter
1/2 tsp salt (brings out sweetness in peaches and brown sugar). *1/2 cinnamon *
vanilla ice cream (or frozen yogurt would be super!!)

Place peaches in a 8x1/2 round baking pan. Combine remaining ingredients. Sprinkle over peaches. Bake at 350 for 30 min. Serve warm with vanilla ice cream.

Waffles With Yogurt and Blueberries

Okay, this so easy it's silly. Lately I can't get enough of this. I had it for breakfast and lunch one day. It's yummy!!! A figure friendly recipe too (a plus!).

Ingredients:

*2 of your favorite multi-grain frozen waffle (a typically serving for Eggo multi-grain waffles)
*blueberries
*a serving of your favorite vanilla yogurt

After toasting your waffles put them on a plate and allow to cool. In the meantime, wash as many blueberries as you like (noticed I didn't give a measurement..eat and enjoy!). Put your serving of yogurt over cooled waffles and top with blueberries. Enjoy! Happy eating!

Chicken Salad

There are MANY recipes for chicken salad, but this is my spin on it. I could eat this two or three times a week. I really really really love chicken salad.

Ingredients:

*1 large chicken breast boiled and cut into a small dice (or you could roast it. extra flavor!)
*1/2 of a Fuji apple, diced
*1/2 c. dried cranberries
*1/2 c. slivered honey roasted almonds
*1 celery stalk finely diced
*1/2 to 1 c. mayo (I used the olive oil kind)
*1 tsp lemon juice
*handful of Italian flat leaf parsley, chopped
*salt and pepper to taste

In a small bowl add mayo, lemon juice, and parsley. Mix well and set aside. In a large bowl add chicken, apple, cranberries, almonds, and celery. Pour dress on top and fold into ingredients. Fold carefully to prevent chicken from breaking up. Cover with plastic wrap and let it sit in the refrigerator for about an hour. Serve on a buttered croissant or just eat you favorite cracker.

Chocolate Zucchini Bread

YUM! I love this stuff!!! I also love the fact that I'm getting a vegetable in my daughter and she doesn't know it! :) You could bake this in two loaf pans for "bread" or you could bake it in a 9x13 pan and ice it. Haven't done that yet, but it would be SO GOOD! I remember my Mom making zucchini bread in the summer all the time because we had so many zucchini in the garden. My husband picked two out of our garden the other day and I knew I wanted to make this. I have been craving it! I know you will LOVE THIS as much as I do.

Ingredients

*1/2 c. margarine
*1/2 c. oil (I used applesauce. It's a low fat way of making it moist and it cuts out a TON of fat!)
*1-3/4 c. sugar (or you can use Splenda)
*1/2 c. milk
*1 tsp. lemon juice
*2 eggs
*1 tsp. vanilla
*4 tbsp. cocoa powder
*2-1/2 c. flour
*1 tsp. baking powder
*1/2 tsp. baking soda
*1/2 tsp. cinnamon
*1/2 tsp. cloves
*1 tsp. salt
*1/4 c. chocolate chips
*2 c. shredded zucchini (2 small zucchini= 2 c.)

In a large mixing bowl cream margarine, oil, and sugar together until well mixed. Then in a small separate bowl mix milk and lemon juice together and let stand 5 min. (you are making "sour milk"). Add eggs and vanilla to mixing bowl and mix well. Then add sour milk mixture. In a separate bowl, mix all of the dry ingredients together; cocoa, flour, baking powder, baking soda, cinnamon, cloves, and salt. Mix well. Then add to wet ingredients. Stir in chocolate chips (**tip- so the chocolate chips don't sink to the bottom of the batter, toss them in a couple of tablespoons of flour before adding to mix) and zucchini. Pour into greased loaf pans or 9x13 baking dish for 50-60 min (until toothpick comes out clean). Allow time to cool before cutting. Enjoy!

Super Easy Cinnamon Rolls

This was part of my husband's Father's Day gift. Food is definitely the way to his heart! These are so super simple. I did try them with whole wheat dough instead of white. Thought I would try to make a "healthier version" of cinnamon rolls (if that's possible). But the best part is you don't have to fuss over making your own dough. Take some help from the grocery store!

Here's how you do it...

Ingredients:

Cinnamon Rolls
*1 pack of your favorite bread dough. Use only 2 loaves (white or wheat)
*1 cup brown sugar
*1/2 stick butter
* cinnamon (your desired amount)
*1/2 cup chopped pecans (optional)
*flour (just for rolling them out)

Cream cheese icing
*1/3 cup fat free cream cheese (or you can do full fat, but with everything in it you won't be able to tell.)
*1 stick butter
*1 cup powdered sugar
*1 tsp. vanilla extract

Thaw 2 loaves of bread dough in the refrigerator all day. Sprinkle counter with flour. Take both loaves and kneed them together until they come together as 1 loaf. Melt 1/2 stick of butter in microwave. With a pastry brush grease 2 9x13 pans with the butter then set aside. Dust your rolling pin with flour and roll dough out to about 1 inch thickness. (Dough will spring back. Don't worry if your dough doesn't seem long enough.) Then brush dough liberally with butter (hey it's not all healthy, but it's good!). Sprinkle brown sugar, cinnamon (your desired amount), and 1/2 cup pecans all over dough. Roll up dough like a jelly role. Stretch out roll (that is why you don't worry about dough springing back). Cut into 2 in. thick pieces and place in greased 9x13 pans. Cover with plastic wrap and let sit overnight to rise (it will double in size). In the morning preheat oven to 400 degrees. Take off plastic wrap and bake for 20 min. While that happens combine all icing ingredients with a mixer until fluffy. Ice warm rolls and enjoy!
